Life has been a bit busy at Chez Hausfrau, but I have
managed to try out a couple of new recipes over the last few weeks. Our family focus has been on reducing
processed foods, unhealthy fats and eating more fresh produce. It’s been a challenge to find new recipes
that do not rely on many hours of prep/cook, processed foods to expedite the
cooking process. I have a young child so
my time in the kitchen can be very limited, it all depends how long she’ll play
by herself or hang out in the kitchen while playing in her high chair.
One of the recipes I tried out was saffron rice which I
served with seared sea scallops and shrimps; I got a bit distracted during prep
and got my ratios off the result was enough rice for a small army. The following day with the leftover rice we
had a cold saffron rice salad with seared chicken, kalamata olives and cherry
tomatoes.

This was a really simple recipe and the rice was delicious
and super flavorful. I think it will be even yummier when I get the ratios
correct. It does require chicken stock; I was able to locate a low sodium
version at my local grocer.
I also prepared a Moroccan Style Chicken, which was well
received by my husband with the small request of less carrot and more zucchini.
This recipe did call for a can of chickpeas (garbanzo beans), a can of tomatoes
and chicken stock; I made sure to select a no sodium version of the chickpeas,
tomatoes and a low sodium version of the broth as I did with the recipe
above. I made couscous to serve with
this recipe.

This was a really easy recipe and quick to prepare, the
recipe makes quite a bit, we were able to have leftovers on a subsequent night.
My other new recipe was for cilantro lime chicken with
avocado salsa, I served the chicken in a taco salad it was so delicious!
